Ingredients:

– 1 cup sourdough discard

– 1 1/2 cups all-purpose flour

– 1 cup milk (dairy or plant-based)

– 2 eggs

– 1/4 cup melted butter or oil (1/2 stick)

– 2 tablespoons sugar

– 1 teaspoon baking powder

– 1/2 teaspoon baking soda

– 1/2 teaspoon salt

– 1 teaspoon vanilla extract (optional)

Instructions:

1. Preheat your waffle iron according to its instructions.

2. In a large mixing bowl, combine the sourdough discard, flour, milk, eggs, melted butter or oil, sugar, and vanilla extract if using.  You could use other extracts like Almond Extract to flavor to taste. Mix until well combined.

3. Add the baking powder, baking soda, and salt to the bowl, and mix until just incorporated. Be careful not to over mix, as this can lead to tough waffles. For a little seasonal flavor add spices like Pumpkin Spice, All Spice or Cinnamon.

4. Once the waffle iron is heated, pour the batter onto the center of the iron, spreading it out slightly with a spatula if needed. Close the iron and cook according to the manufacturer’s instructions, or until the waffles are golden brown and crisp.

5. Carefully remove the waffles from the iron and serve immediately, or keep them warm in a low oven until ready to serve.

6. Repeat with the remaining batter, cooking additional waffles as needed.

7. Serve the sourdough discard waffles with your favorite toppings, such as fresh fruit, maple syrup, whipped cream, or yogurt.
